Fish is a popular non-vegetarian dish, with regional variations in taste and preparation. Bihar, once dependent on West Bengal for fish supply, is now becoming self-sufficient in fish farming. A fisheries official from Bhagalpur explained that fish from three main sources, Ganga river, general ponds, and Chaur/Chanan areas, have distinct flavors. The Chaur region's fish are considered the most delicious due to their natural diet and the unique soil and climate conditions, offering a sweet and unique taste unlike river fish which can sometimes have an odor from river debris.
