लखीमपुर खीरी के किसान खीरे की खेती को आय का जरिया बना रहे हैं। यह जल्दी पकने वाली सब्जी है। किसान ट्रेलीस विधि का इस्तेमाल कर रहे हैं, जिसमें खीरे की बेलों को सहारे पर उगाया जाता है। इस तरीके से खीरे साफ-सुथरे मिलते हैं और कटाई भी आसान हो जाती है। इससे स्थानीय मंडियों और दिल्ली व कानपुर जैसे बड़े शहरों में नियमित सप्लाई हो पाती है। एक किसान ने बताया कि दो बीघा से रोज़ाना एक क्विंटल से ज़्यादा खीरे मिल रहे हैं, जिनकी कीमत ₹25-30 प्रति किलोग्राम है। बड़ी मंडियों में मांग होने से किसानों को बेचने के अच्छे मौके मिल रहे हैं, जिससे उनकी कमाई बढ़ रही है।
