While 100 grams of raw lentils contain about 22-24 grams of protein, this figure drops to 8-9 grams after cooking due to water absorption. These legumes also contain approximately 60-62 grams of starch per 100 grams, comparable to grains like rice and wheat. However, a portion of this starch is indigestible, leading to gas and bloating in some individuals.
