Haldiram’s USA के एग्जीक्यूटिव शेफ़ सिद्धार्थ परब का कहना है कि भारतीय खाने की असलियत सिर्फ़ सामग्री और रेसिपी से कहीं ज़्यादा है। उनका ज़ोर है कि पकाने के तरीके, सांस्कृतिक संदर्भ, स्वाद और किसी डिश के पीछे का इरादा भी उतने ही ज़रूरी हैं। परब बताते हैं कि धीमी आंच पर पकाना, मसालों को भूनना और फर्मेंटेशन जैसी पारंपरिक विधियाँ किसी डिश के अंतिम रूप और स्वाद पर बहुत असर डालती हैं। वह यह भी बताते हैं कि भारतीय खाने की विविधता, जिसमें क्षेत्रीय भिन्नताएँ और पारिवारिक बदलाव शामिल हैं, का मतलब है कि असलियत की कोई एक परिभाषा नहीं है।
