Mushrooms Eaten After Space Station Trip

Fungi spent nearly a month on the International Space Station before returning to Earth in 2025. Researchers at Swinburne University of Technology sent three edible species as mycelium aboard a SpaceX rocket in August 2024. Upon return, the fungi were grown into mushrooms, with lion's mane ready within a week. The team then cooked and ate the space-grown mushrooms, turning a biology experiment into a literal taste test.
